Today's meal....
2 lbs ground beef
2 bunches of fresh coriander
2 medium onions
1 hot pepper
3 Cups basmati rice
1 lb fresh or frozen green beans
salt and pepper to taste
chili powder
~~
Here's what I did....I put some oil in my heavy pot and started to brown the ground beef, I processed the onion, hot pepper and coriander in the blender until I got a watery sauce.(add water if you have to) I poured the sauce onto the cooking ground beef and let it boil away on med hi heat until cooked,(add salt and pepper and chili powder!!) then I put the green beans in and let it cook for about 2 minutes. Meanwhile, rinse the basmati rice well, and pour on top as well. Cover and let cook for a bit on the same med hi heat....then turn down really low until rice is cooked thru out.
I'm going to make a yoghurt sauce to go with this....it'll be, yoghurt, some fresh coriander, fresh garlic and salt. I may throw in some small cut cucumber pieces. Mix well together and let sit to develop flavours. You can spoon this on the rice while eating it.
~~
I'm a real fan of one dish meals....so here's a good example of one. It didn't take long to cook......It could be done super fast if you use the pressure cooker....which I love to do, but didn't do today.
Give it a try!!
